The short ribs ($30) at Moro's Kitchen at his Skaneateles restaurant were so tender that they cracked just by looking at them. Slow cooking for a long time breaks down the fatty tissue, seasons it from the inside, and adds a rich beef flavor to the tomato and vegetable sauce. A whole plate of plum tomatoes and a large piece of boneless beef are mixed on the plate.
